If you know *anything* about me... you'll know I love cookies. All kinds of cookies. I like homemade cookies straight out of the oven and store bought cookies that have been in production for months before coming into my home. (I'm not proud of this...it's just the way it is. Don't judge me.) (Okay.... judge if you want....but at least stick with me.) I love decorated cookies and drop cookies and no-bake cookies. My favorite cookies are the kind that other people make for me, but these molasses cookies might be a close tie.
If someone were to make these cookies for me...we would pretty much be best friends forever. And also we would be throwing our bathroom scales off the balcony together. Because they are that good. And addictive. And good. Did I say that already? Because I don't want this to be confusing. Make these. Eat them. Don't share. Well...unless you want to be my best friend forever and throw stuff off the balcony with me. In that case...I'll be home all night.

Chewy White Chocolate Chip Molasses Cookies
Soft and chewy molasses and white chocolate goodness in cookie form!

Ingredients
- 1/2 cup softened unsalted butter
- 1/2 cup shortening
- 3/4 cup packed brown sugar
- 1/2 cup granulated white sugar
- 1/3 cup molasses
- 1 extra large egg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 3 cups flour
- 1 1/2 cups white chocolate or vanilla chips
Instructions
- Preheat oven to 350° F.
- Cream butter, shortening, and both sugars together in a medium mixing bowl.
- Add molasses and egg and mix well.
- Stir in baking soda, salt, and spices.
- Add flour one cup at a time, stirring until combined.
- Add the white chocolate or vanilla chips last, mixing by hand. You could probably get by on just one cup of these, but let's not skimp on being fantastic.
- Drop the cookie dough by rounded spoonful onto a well greased baking sheet. Bake at 350° F for 8-10 minutes.
- Please allow the cookies to cool before trying to consume every last one of them.
